How about a trip down memory lane, looking at what is probably my favorite memorial over the years. New recipe: a veggie-focused dish that will make your tastebuds happy. I admit, not the most beautiful of dishes, but perfect for a weeknight (or any night) when you want something tasty and not meat-ful.
