Great breakfast or snack: Pumpkin bars
You'll think I've lost my mind with this one, but ... I haven't. Trust me, your kids will like it! So will your spouse. These bars are high in fiber, low in fat and quite tasty. Great for the lunch box, too! You can use any kind of white bean. 1 15-oz. can great northern beans, drained and rinsed
