I’m telling you: She is brilliant. I just love Deb at Smitten Kitchen. The two recipes that follow are my favorite things to do to zucchini. Both are easy, both can be customized to accommodate dietary preferences (with or without cheese, adding a smidge of chili or not), can can easily morph from side to veggie main by adding a favorite grain or pasta, and both are kid-friendly (both making them and eating them).
