Marshmallow treats, Susie-style

There’s no point in making a food if no one is going to eat it. There’s also no point in healthing something up so much that it is no longer an acceptable version of the food (and again, no one will eat it). I have a confession to make: My kids like marshmallows. They also like sweets. A lot. Try as I might, I can only get so many meals past them without adding a sweet ending onto it.

You’ve all made Rice Krispies Treats, right? Take some marshmallows, melt them, add butter and then some rice krispies and mix. Not hard. Not that good for you, either, though.

I’m going to give you the version I make. It’s still sweet. It’s still gooey and your kids will like it, I promise. Put one of these in their lunchbox or give them ne as an after-school snack and you will have some happy kids. It is, though, a bit higher in protein and in fiber than the traditional version.

Marshmallows you can get at the commissary and at the American store. You can also find Cheerios and Grape-nuts at the American store.

Marshmallow treats, Susie-style

1 bag marshmallows (10 oz, about 4 cups)

2 T plain peanut butter

1 tsp vanilla

7 cups plain Cheerios or other whole grain non-sugared oat cereal

½ to 1 cup Grapenuts cereal (optional, but trust me)

Coat a 9 x 13 pan with cooking spray. In a large microwave-safe bowl heat peanut butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Add vanilla, stir. Add Cheerios and Grapenuts, if using. Stir until well coated.

Spray your hands with cooking spray, and evenly press mixture into pan. Cool. Cut into 2-inch squares. Enjoy!
