Recipe: Bowls! It's what's for dinner

Dressing/sauce for (insert bowl here)

 

 

It’s a new/old thing, right?  This Bowl of whatever for dinner fad?

 

This dressing is a tasty addition to any bowl concoction you might be making for dinner.  I find that bowl dinners are great because everyone gets to include what and how much they want, they get to add chilis or not, and whatever sauce they want.  It’s the perfect meal for families (and guests) with a wide gamut of food preferences.

This sauce is tasty, though use it more as a formula to personalize than a set-in-stone sort of a recipe.  Add what seasonings you like.  And me?  I always add chili (e.g. sriracha, Frank’s, or whatever I grab first).

 

 

Tahini sauce

(for 4 portions)

 

8 T Tahini

Juice and rind of one lemon

1 tsp Tumeric

1 tsp Cumin

1 clove garlic, pressed

1 tsp Smoked paprika

6 T olive oil

Salt and pepper, to taste

 

Mix all of the above ingredients in a small bowl or jar.   Let sit at least 30 minutes for flavors to blend.

 

For our favorite bowl concoctions, I generally make a pot of some sort of whole grain (best options add a bit of heft and chew like sorghum, quinoa, farro, or barley); add a protein (shredded chicken, salmon, crispy tofu, falafel or whatever you are in the mood for); add a roast veggie or two (we love roasted broccoli, carrots, okra, or cauliflower.  I am a huge fan of roasted mushrooms, too); add a raw veg or two (shredded carrots, lettuce, tomatoes, cucumbers, etc); shredded or crumbled cheese (cheddar or feta or your favorite); and a sauce.  Voila!
