Coconut Date Balls

You should know that I consider my three boys my guinea pigs, and pretty much everything I put in this blog, they have tasted and tested.  They give very honest reviews and feedback ... sometimes a bit too honest.  This one, though, has been a hit since the first time I made it.  Great for the lunchbox, great for a welcome home snack.  The coconut and almonds give it staying power in tummies, and the dates just make it all taste good.  A good for you snack that takes less than 30 minutes to finish?  That's a keeper, I promise.  You can sub in other nuts if you'd rather.  


Coconut Date Balls


  • 2 cups pitted dates

  • 3-5 Tablespoon water

  • 1 cup coconut flakes, toasted

  • ½ cup coconut flakes, untoasted

  • 1 cup slivered almonds, toasted


Line a sheet or plate with parchment or foil. Set aside. Put untoasted coconut in a small bowl. Set aside. Place dates in bowl, and smoosh dates pieces against side of bowl until smooth, adding 1 T of water at a time as needed. Add toasted coconut and almonds and mix well. Shape mixture into 1-inch balls and roll in coconut flakes. Enjoy immediately, or refrigerate/freeze for later.
